My favorite Grilled & Ready® product is their fully cooked chicken breast strips. I use them all the time. I love the convenience of having fully cooked chicken breast at my disposal whenever the need arises. It’s easy to make healthy choices when the good stuff is right in front of you.
When I was younger I hated Chicken Salad. I’m sure it had something to do with the way it was presented to me. Canned chicken, loads of mayo, and… well, that should pretty much sum up why I hated it. I have a serious dislike for canned chicken. Sorry, but it screams “cat food” to me. And let’s be honest, how can anything with a shelf life of nearly 5 years really taste that fresh?
Nowadays I make my Chicken Salad with freshly shredded chicken breast, but when I’m in a hurry and don’t want to bother with boiling or roasting chicken I reach for a bag of Tyson® Grilled & Ready® fully cooked chicken breast strips. I skip the mayo and opt for some rich and creamy plain Greek yogurt. This time to boost the creamy factor (without adding any guilt) I added some mashed up avocado to the mix.
This Avocado and Greek Yogurt Chicken Salad Sandwich is cool, creamy, bright and fun. Not to mention a healthier alternative to the classic mayo filled version. Perfect for keeping you on track to a happier, healthier, better you.

Avocado and Greek Yogurt Chicken Salad Sandwich
Ingredients
- 1 Avocado, pitted and peeled
- 3/4 cup Greek Yogurt
- 1 tbsp lemon juice
- 1 green onion, diced
- 1 tsp fresh, or dried dill, minced
- 1 tsp garlic powder
- 1/2 tsp salt
- pinch of pepper
- 3 cups chicken breast, coarsely chopped
- 1/2 cup celery
- 1/4 cup almonds
- 4 whole wheat ciabatta rolls
- lettuce
- tomato sliced
Instructions
- In a medium bowl mash the avocado until smooth, then add in the greek yogurt, lemon juice, dill, garlic powder, green onion, salt and pepper, stir to combine.
- Gently toss the chicken, celery, and almonds in the avocado and greek yogurt mixture
- Prepare the ciabatta rolls (you can toast the rolls if you want) with lettuce and the sliced tomato. Divide the chicken salad mixture among the sandwiches.
- Enjoy.
