I haven’t always liked coconut.
It’s one of those things that grew on me as I got older. I guess what really grew on me were those delicious little Almond Joy candy bars. I don’t know if it’s the almond, the coconut, or chocolate…but they are one devine treat.
Speaking of devine – I just adore brownies.
I mean- the corner brownie. {am I alone here?}
Some may like the ooey-gooey center pieces, but I prefer the crustier corner piece.
The perfect bite size brownie- corner piece included!
Complete with coconut and almond center.
These little brownie bites will make you jump for joy!
These are a snap to put together. All I used was a boxed brownie mix, and added a 1/2 cup of mini chocolate chips {for good measure}.
The coconut mixture is a simple 1-2-3. Sweetened condensed milk, sweetened coconut flakes, and powdered sugar. In a small bowl combine 1/2 cup sweetened condensed milk, 1 1/4 cup coconut, and 4 tbsp powdered sugar. Give it a good mix.
Spray a mini-muffin tin with cooking spray, and layer with brownie batter, coconut mixture, and almond.
Top with brownie batter, repeat.
Bake for 8-10 minutes, remove from oven and let cool in pan for 2-3 minutes.
Try not to eat all of them when they are warm and sublime…others will want some too.
Remove to cool completely on a wire rack.
Oh mama….
Me likey…
So if you’re anything like me– {never mind you don’t want to be like me}
If you’re human- you’ll love these!

Got it fixed! Sorry about the confusion. 🙂

I tried these yesterday. Made sure my mini muffin pan was overly sprayed with Pam & there was no way these little wonders were coming out of the pan. I had to dig them out. They tasted delicious but what a mess!
Shawn
Oh no! So sorry they stuck on you! Next time you might try coating the inside with Pam and a light dusting of flour. Some pans work better than others, but a dusting of flour usually helps in all cases.

totally agree!!! I made these for company and there’s no way I can serve them. I over sprayed and, cool or warm out of the oven, there’s no way mine look like your picture.
The coconut mix oozed to the bottom and stuck.
Very disappointed, which is too bad as our family loves coconut!

Okay, now this is just getting weird. About 2 weeks ago, I made marbled chocolate pumpkin cupcakes with cream cheese frosting…a few days later you posted a pumpkin chocolate chip cupcake recipe. It's different, but still quite similar. Yesterday I went to the store to get ingredients for Chimichurri to have that night with our hamburgers. That day, you posted your chimichurri recipe. And now today..I just made a chocolate cake with melted Riesen's candy mixed in. I get online and you posted your yummy brownie Almond Joy bites, which is different, but still using the candy bar/cake duo idea. So, weird right? Our brains are either hard wired together or we just have very similar cravings at the same time. LOL. Yet, we're miles apart!! 🙂
