I’m a total sucker for quick and easy desserts. Obviously.
These White Chocolate Raspberry Mousse Tartlets take quick and easy to a whole new level. They’re also extremely tasty and somewhat fancy looking! Did I mention that they’re also a skinny dessert? Yeah… so pretty much I want to marry them.
As you know, we just moved into our house last month. Well, we have been busy getting to work on doing some remodeling. Needless to say our house is a revolving door of workers and tradespeople getting different jobs done around the house.
Our master bathroom has been gutted and just a couple days ago there was a man working on putting the tile floor down in there. He got here super early in the morning so we were all still getting ready for the day.
Then I realized that I desperately needed to pluck my eyebrows. TMI?
I grabbed my tweezers and decided to pluck my brows in the upstairs bathroom, which happens to be around the corner from the master bedroom. Whenever the guy who was doing the tile in my bedroom would walk by the other bathroom I would quickly hide the tweezers and pretend I was just looking at myself in the mirror.
Two things: One – I’m not sure why I thought that was a better scenario, and Two – I’m not sure why I didn’t just close the bathroom door.
Naturally, when I tweeze my eyebrows it makes me sneeze. So when the tile man happened to be walking by at the same time as I plucked/sneezed he paused at the door and thought it was an opportune time to strike a conversation about allergies and the changing weather.
I nodded and politely agreed that, “Yup, it’s definitely allergies.” while hiding the tweezers behind my back…
After I finally finished up the pluck of the century, another man who was doing some work at the house walked up to me and started talking. He paused, looked at me again, and asked, “You’re the same lady I was talking to before, right? You look different.”
And now you know why I desperately needed to tweeze them eyebrows.
Anyways… This light and fluffy mousse is a quick fix made with nutrient rich milk, sugar free white chocolate pudding mix, lite Cool Whip and plump red raspberries. These little tartlets can be ready to enjoy in less than 10 minutes!

White Chocolate Raspberry Mousse Tartlets
Ingredients
- 30 pre-made Phyllo Tartlet shells, found in the freezer section by the desserts
- 1.1 oz package sugar free white chocolate pudding mix
- 1 cup cold, low fat milk
- 6 oz. Lite Cool Whip, thawed
- 1 cup fresh raspberries, finely chopped
Instructions
- Leave the tartlet shells on the counter to thaw while you quickly whisk together the mousse.
- In a large bowl combine the pudding mix and milk. Whisk until smooth and combined. Add the cool whip and raspberries and gently fold them into the pudding mix to make it light and fluffy.
- You can spoon or pipe the mousse into the tartlet shells. Keep refrigerated until ready to serve.
