Who hasn’t had those two little tacos from Jack In The Box? You know the ones…fried, filled with cheese, beef and a little lettuce all for only $0.99! Yup, they are cheap but are they any good for you? One look and I think we know that answer!
I loved this challenge cause I do love those tacos. Two of those tacos contain 364 calories and 20 grams of fat, I knew I could do better than that!
Simple Simple Simple… Here’s what I did to make this Guilty Pleasure much more Guilt-less!
Here’s what you’ll need:
I started off with yummy corn tortillas, and laid them flat on a tin-foil lined cookie sheet.
I sprayed them with Pam and turned my oven onto broil. Let them cook for just a few minutes until they just slightly start to brown, and pull them out.
Meanwhile get your ground turkey and brown it in a skillet, breaking it down into tiny pieces until it’s no longer pink. Drain any fat and add the Cheesy Taco seasoning mix.
Then with your tortillas turn them over so the browned side is now facing down. Put a spoonful of the meat mixture on the tortilla and fold in half. Repeat for all tacos.
Once you have them all filled, put back into the oven and broil for just a minute or two, flip and broil a minute or two longer.
Once they are out of the oven, take your cheese slice and cut it on the diagonal. Take one half of the cheese and put it into the taco (pointy side facing out of the taco), and stuff with shredded lettuce {I used cabbage}.
These tacos tasted extremely yummy!
Plus the fact that they were a little healthier made it that much more enjoyable! I cut the calories down to 290 {for the pair} and the fat down to only 11.5g!
Bring on the Guilty Pleasures! What else can you throw at me!?

Ingredients
- Corn Tortillas
- 3/4 pounds ground Turkey
- McCormick Cheesy Taco Seasoning Mix Packet
- Weight Watchers Cheese Singles
- Shredded Lettuce or Cabbage
Instructions

mmm… those look so good! I crave those things all through my pregnancies… nice to know there's a healthier option for next time! I also crave fresh pretzels with nacho cheese… is there a healthier way for those too?
