Hi, I’m Wendy from Around My Family Table. I just recently met Shawn at Camp Blogaway and found out we live very close to each other. We’ve hung out a few times since camp and she is such a sweetheart! I’m thrilled to be guest posting today on I Wash…You Dry!
My kids are pretty boring when it comes to lunch. It’s either mac & cheese or Chick-fil-A (aka chicky moo as my 3yo son calls it). But I can occasionally sweet talk them into something a little more exciting like hummus and pita bread, ham roll-ups, soup, or every once in awhile I can sneak in a dressed up leftover dish! I think my kids can spot leftovers from a mile away, but I’ve learned how to hide them pretty well. Yes, I’m a super sneaky mom! I put veggies in their fruit smoothies and they have no idea! Ha!
There really isn’t a recipe per se for this, but more of a concept. Trust me…you can do this. Loaded BBQ potato skins! They were so good, my daughter had thirds….I don’t think she has ever had thirds in her life. I know these are super cute, but they are somewhat healthy and use up those pesky leftovers.
I used up some leftover smoked turkey and brisket for these potatoes. But pulled pork or chicken would be awesome too! Use your own leftovers or even from a restaurant….it’s up to you where you get your leftovers from. Of course, use
your leftover potato skins if you have any…otherwise, just make new ones.

Loaded BBQ Potato Skins
Ingredients
- 4 potatoes, cooked and halved
- 1 cup BBQ meat
- 2 tbsp BBQ sauce
- 1/2 cup cheddar cheese, shredded
- salt and pepper
- milk and butter, optional
Instructions
- Preheat broiler on high. When potatoes have cooled slightly, scoop out a little of the actual potato into a large bowl. Add a little butter and milk to the bowl and mash. Season with salt and pepper. Add a little of the mixture back into the potato skins.
- Combine meat and sauce in a bowl and scoop into the potato skins. Sprinkle with cheese. Place under the broiler just until everything heats through and cheese is melted. Watch it closely so it doesn’t burn.
