Loaded Baked Potato Soup Recipe
I was so surprised at how quickly this comfort food recipe came together.
She has a brilliant tip – microwave your potatoes to cut down on the cooking time. I quickly zapped my spuds in the microwave while I was cooking up some bacon on the stove top. Before I knew it, the soup was ready!
The only thing I did change about this recipe was that I left some of the potato skins on the potatoes. We love the texture of them and I liked how it gave the soup a little more depth.
It’s obviously totally optional and would be amazing either way.

Loaded Baked Potato Soup
Ingredients
- 4 potatoes, scrubbed
- 8 bacon slices
- 4 tbsp unsalted butter
- 2 garlic cloves, minced
- 1/4 cup yellow onion
- 1/3 cup all-purpose flour
- 2 cups low fat milk
- 1 cup half and half
- 2 cups chicken stock
- 1 tsp salt, plus more to taste
- 1/2 tsp garlic salt, plus more to taste
- 1/2 tsp black pepper
- 1 cup mild cheddar cheese
- 1 cup sharp cheddar cheese
- 1 cup sour cream
- fresh chives, for garnish
Instructions
- Pierce the potatoes multiple times with a fork, then microwave them for 12 to 15 minutes, or until tender.* Carefully halve the potatoes and let cool. Once cool enough to handle, remove the skins, and cut into chunks.
- Meanwhile, cook the bacon in a skillet over medium-high heat until crisp. Transfer to a paper towel-lined plate to drain and cool. Reserve up to 1 tablespoon of the bacon fat from the pan, discarding the rest. Once the bacon has cooled, crumble it into small pieces.
- In a large pot, melt the butter over medium-low heat. Add the reserved bacon fat, garlic and onion and cook for 2 to 3 minutes, or until the onion is tender. Slowly whisk the flour into the pan and stir for 1 to 2 minutes. Slowly whisk in the milk and half-and-half. Keep whisking until smooth. Gradually add the chicken stock. Bring to a light simmer and whisk in the kosher salt, garlic salt and pepper. Keep at a light simmer until the mixture has thickened slightly, 5 to 7 minutes.
- If you'd like to use cheeses and bacon as a garnish, reserve 1/4 cup of t each. Stir in the remaining cheeses, remaining bacon, and the sour cream. Remove the pot from the heat. Scoop potato chunks into the pan, breaking them into small pieces or leaving them chunky, depending on your preference. Serve hot, topped with your favorite garnishes, like cheese, bacon and chives.

This was a lovely recipe; thank you, Shawn! It did take me longer than the estimated 35 minutes start to finish, but it was my first attempt and I’m not entirely familiar with the recipe yet. I added more salt, pepper, and garlic with the addition of dried dill and paprika – I’m not saying it’s better that way, but I seasoned to my taste. I had whole milk on hand so that was the only milk product that I used. I decided to cook the potatoes in the Instant Pot which worked out incredibly well. Everyone loved the soup – this one is a keeper!

Just tasted and it’s delish! We will eat tomorrow and it will be even better! Tweaked the recipe a bit–added dried parsley and a bay leaf. Had cream and whole milk on hand from Thanksgiving so used that and just added more chicken broth. Also added Velvetta. Will wait to add bacon, cheese and sour cream as garnish only. Great recipe! Definitely took me more than 30 minutes, and the soup came out a bit too thick, but that’s probably because the potatoes I had were huge. Nothing some extra chicken stock won’t fix. Overall, this is a really, really good recipe. Make this now!

This is By far the best Loaded baked Potato soup I have ever eaten and that’s saying A Lot because I have tried lots of different Recipes I gained 30 pounds just cooking it then another 10 eating it if you don’t try this you are Missing out or leaving more for someone else LoL I made a double batch and we maybe have 3 bowls left giving the rest to my sister her Husband and Daughter to try thank you for such a Wonderful recipe I usually do not leave a Comment but this was too good no to…. now the only thing I need is to loosen a notch on the belt so my belly don’t bust again Thanks…

The first time I made this recipe I accidentally used 2 cups of half and half and 1 cup of chicken broth. I threw a chicken bouyon to dr my mistake and this still came out wonderful. I’m not buying Progresso anymore!!! even my picky mother in law gave me a compliment 🙂 I’m sure it was shade ,but a compliment none the less.

This recipe was a big hit! I made a double recipe exactly as is! Perfect! I used 10 potatoes, yellow potatoes. Garnished with cheese, bacon, green onions and sour cream. Served with French Bread. Yum. Will make this again!!!

I doubled this recipe to take to a carry-in supper in a crock-pot. Cooked the potatoes in the Instant Pot, cut the bacon (about 3/4 pound) into pieces before frying, then pretty much followed the recipe. Poured the onion, etc. roux, plus bacon, into the crock pot and heated the other ingredients in the microwave before they were added to make it easier on the crock-pot. Also added some frozen corn which also was heated. Darned good stuff, if I say so myself — others did also. Thanks for a quick & easy recipe.

The only changes I made was throwing in some fresh thyme with the onions/garlic, used 3 cups of whole milk, and I used some homemade ham stock. This soup is definitely going in the rotation.

Wow. This was outstanding. I’ve been on the search for a good baked potato soup . I tried the one that has a ton of stars from all recipes. While the flavor was good the consistency was like slightly thinner than mashed potatoes. Way too thick. This recipe however was the PERFECT consistency. Not too thick not too thin. Just right. Not to mention the flavor is on point. Thank you SO MUCH!! Happy bellies in my house right now!

This was ok- if I would make it again I would definitely add more chicken stock, it came out more like a stew. But 30 mins? You gotta share that magic you’re working in the kitchen, this took me well over an hour!

You can definitely add more milk or chicken broth if you like a thinner consistency. As for the 30 minutes, I find I can breeze through a recipe if I have all the ingredients out and ready to go. Multitasking can also come in handy. 😉
