Goddess Chicken Satay

Today I have Carolyn from All Day I Dream About Food sharing a great recipe with us. I’ve said it before, and I’ll say it again… food on a stick is just… better! My kids always seem to gobble up anything we throw on a stick. Maybe it’s their caveman tendencies coming out, or the fact that they get to play with the sticks after the food is gone…who knows. Either way, Carolyn nailed it with this extremely easy and tasty chicken.

I am delighted to be guest posting here today on I Wash…You Dry, and even more delighted to be sharing an incredibly easy, kid-friendly lunch idea with you. Shawn and I met only just recently, at Camp Blogaway at the beginning of May, but she was so sweet and it was lovely to get to know her. And she has even more kids than I do, so the fact that she is seemingly sane is quite astonishing. I know my own sanity is always somewhat in question, due primarily to having more kids than I have hands.

So I love her idea of guest posts about easy lunch ideas for kids. There is almost nothing I dislike more than making my kids’ lunches, for school or camp or daycare, each morning. I refuse to purchase the school lunch programs because they really aren’t up to snuff in the healthy food department. But I still grumble as I pack those lunches, because each kid has their likes and dislikes and it can tough finding something they will all eat.

But when Shawn asked me to do this guest post, it hit me like a lightning bolt. I can take no credit for this idea, it was something a friend served to my kids when we were over at her house a few months ago (thanks, Meran!). My kids raved about the chicken all night, and it was so simple, just marinate them for a few hours in Goddess Dressing, cook them and away you go. The only change I made here was to stick the chicken tenders on skewers and grill them, instead of broiling them. And my husband claims credit for that idea, so I guess I didn’t really have any part in this whatsoever!

But there is nothing easier than this, especially now that grilling season is here. They are good both hot and cold, so you can send them in to camp or school with your kids and they will just be happy to be eating chicken-on-a-stick in front of their friends.

Goddess Chicken Satay

This Goddess Chicken Satay is good both hot and cold, so you can send them in to camp or school with your kids and they will just be happy to be eating chicken-on-a-stick in front of their friends.

Ingredients

  • 1 ½ lb chicken tenders
  • ¾ cup Goddess Dressing, I used Annie’s
  • Bamboo or metal skewers

Instructions

  • Arrange chicken tenders in a single layer in a large glass or ceramic baking dish. Pour Goddess Dressing over tenders and toss to coat. Refrigerate and marinate for at least an hour and up to 24 hours.
  • Skewer chicken tenders. If you are using bamboo skewers, make sure to soak them for at least an hour before skewering and grilling.
  • Fire up grill and lightly grease the grilling surface. Grill chicken tenders 5 to 7 minutes for the first side, then flip and grill for 5 minutes more. Remove from grill and let cool 5 minutes.
  • **You can also broil these, 3 to 4 inches from heat source, for about the same amount of time as on the grill.

Only Annie's Light Goddess Dressing is Gluten Free.
