These Popped Rice Clusters definitely do not disappoint!

This asian-inspired Ginger Sesame Trail Mix is a fun combination of Soy Vay's newest snack - Popped Rice Clusters along with dried fruits and nuts. Perfect for snacking on the go!

The clusters are a combination of popped wild and brown rice topped with black sesame seeds, chia seeds and even peanuts in three awesomely bold flavors – Thai Style Peanut, Spicy n’ Sweet and Ginger n’ Sesame.

It’s hard to pick a favorite between the three of them, but I ultimately chose the Ginger n’ Sesame to create my own Ginger Sesame Trail Mix.

We’ve been on the go a LOT this summer. We’ve been to the beach, up into the mountains, and I just got back from a week-long church youth girls camp, all within one month’s time.

Having snacks on hand is a MUST around here. Rather than reach for cookies or chips, I made this bold-flavored trail mix to keep the snacking exciting and fun!

It’s so crazy simple to make too, which is awesome! Just grab a bag of your favorite Soy Vay Popped Rice Clusters and pick out a few extra goodies to toss in!

I went with some dried green beans (I also had some wasabi peas, but my kids think those are too spicy), dried apricots, sesame sticks and salted cashews plus a bag of the Ginger n’ Sesame Popped Rice Clusters.

Toss it all in a bowl and store in a few small tupperware or zip close bags for a quick snack on the go!

Ingredients

  • 1 Soy Vay Ginger n' Sesame Popped Rice Clusters, 4oz package
  • 1/2 cup salted cashews
  • 1/2 cup dried apricots
  • 1/2 cup sesame sticks, I find these in the bulk foods section
  • 1/2 cup dried green bean crisps, I also find these in the bulk food section

Instructions

  • Combine all the ingredients in a bowl and stir to combine.
  • Store mix in individual tupperware or zip close bags. Grab and take with you for a snack on the go! Enjoy!
