Coconut Cookies

These Coconut Cookies are soft and chewy like a typical cookie, but with a hint of coconut flavor and filled with coconut chocolate candies!

Coconut Cookies Recipe

The other day I was strolling through Walmart {cause I’m cool like that} and I came across these Butter Flavor Crisco baking sticks. I was slightly intrigued.

Butter flavored Crisco…. hmm…

On the package there is a picture of some tasty looking cookies and it gave me an idea. I’m going to try out some Butter Flavored Crisco and make some cookies with it.

Then I thought I would bake some cookies with 1/2 Crisco and 1/2 Butter, and then make another batch with just all butter. I thought it would be fun to share the results with you for each batch! Yes?

So this first batch is all Crisco…

I mean, baking cookies can be pretty tough. My definition of a great cookie is crisp on the outside but still tender on the inside. I was surprised at how great these cookies turned out with all Crisco.

They were soft on the inside with just a slightly crisp and buttery outer edge.

Have you tried the Coconut M&M’s yet? They are so addicting.

Which in turn makes these cookies extremely addicting.

A bowl of green, white and brown Coconut M&Ms

I’m definitely sold on the Butter Flavor Crisco recipe. I am really interested to see how the other recipes stand up to it. If you’re not a fan of coconut just swap out the coconut M&M’s for some chocolate chips and take out the coconut extract.

Maybe with all these cookies I’m making I will become a better baker.

Or at least the coolest neighbor on the street…

Instructions

  • Preheat oven to 375 degrees F.
  • In the bowl of your mixer cream together Crisco, brown sugar, and milk until the mixture is light and fluffy.
  • Add in the vanilla, coconut extract and egg and mix until combined.
  • In a separate bowl whisk together the flour, salt and baking soda. Slowly add the dry ingredients to the wet ones and keep mixing until combined. The dough will seem a little more wet than usual, but it's ok.
  • Stir in the coconut M&M's and scoop by large tablespoons onto a baking sheet. Flatten out the cookies slightly with the back of a spoon.
  • Bake for 9-11 minutes, remove from oven and let sit on baking sheet for 2-3 minutes before removing to a wire rack to cool completely.

  1. Love these cookies. I’m also a huge fan of coocnut & I do remember buying
coconut kisses a long time ago here in Indy. They were a limited edition flavor
I think. Maybe you could find them at www.hometownfavorites.com? Or put
hersheys chocolate bars & coconut in food processor & form your own coconut
kisses might be easier. Just cover them with melted chocolate. I wish they’d
bring them back they were delicious so your friend was not messing with you.

  2. Hi, stopped by, I believe, via Pinterest and a recipe credited to you! Am intrigued when I see coconut and cookie together, yum. Often see the butter Crisco sticks but have not seen the M and M’s, I wonder how long they have been around? I will be trolling the market aisles today as my baking larder is on empty, but soon these cookies will be made by me. Thanks, and now I am off to look at your pumpkin recipes.

  3. I have some of that butter crisco – I don’t use it as often as traditional/unflavored crisco but it comes in handy sometimes. I love that you used coconut m&ms!

  5. Mmmmmm….those M&Ms. Gotta love them!! I used to use butter flavored crisco all the time. I’ve been anti-crisco for awhile…but am seriously considering doing a flip-flop. I think these may have made my decision for me…. 🙂

  6. For years, my mom has used half butter-flavor crisco and half butter/margarine in her chocolate chip cookies. The coconut M&M cookies look amazing. I also the coconut and chocolate combination. In fact, I plan to make a Mounds cake this week!

    1. I am excited to try the 1/2 and 1/2 combo! I bet they will taste great too. And whoa! A mounds cake sounds fabulous!!

  7. Coconut and chocolate is one of my FAVORITE combinations! My friend swears he once found coconut Hershey kisses, but they are ever elusive to me. To this day, I still believe he was messing with me..

    Loving this. =)

  8. I’d seen that Crisco and have been intrigued but haven’t taken the plunge to buying them yet. Good to know they make a mean cookie! Those look awesome and I LOVE those coconut M&M’s.
