I get asked all the time, “How do you maintain your girl-ish figure with all those sinful goodies you bake?”
“Well,” I respond. “I make sure to add something healthy into the mix every once and awhile. For instance… the banana in this Banana Nutella Crunch Bread totally counter-acts all the chocolate and Nutella.”
{Then I secretly put on my Spanx and eat a handful of pretzel M&M’s}
In an attempt to eat healthier and lose all those post-baby lbs, I bought myself some adult cereal. {Sorry Mr. Leprechaun…no more chasing marshmallows to the end of the rainbow for me}
You know those “adult cereals,” the ones that we are forced to buy just because we have children and are suppose to be “responsible” {big air quotes here} about our health.
They mostly consist of some sort of flake or nut or heaven forbid- bran. Don’t get me wrong, I like to be healthy…but I can’t help but feel my inner child dying a little each time I act all grown up and grab a box of “Look at me, I’m an adult” cereal.
So I buy this box of Banana Nut Crunch and on the back is this crazy recipe for some Chocolate Banana Bread! {touche, way to reel me in…}
I thought it was lacking a little oomph, so I spruced it up with a little Nutella. I was tempted to replace the Banana Nut Crunch with Lucky Charms…but that would just be crazy…
It’s a really simple recipe to throw together, and tastes all grown up and healthy. {because of the banana of course…and the cereal}
This bread actually makes me proud to call myself an adult. My inner child is happy.
Even my kiddos loved it! They are growing up so fast!
So put down those Captain Crunch Berries and grow up already!
Banana Nutella Crunch Bread
Ingredients
- 2 1/2 cups Post Banana Nut Crunch Cereal
- 2 oz semi-sweet chocolate
- 2 tbsp Nutella
- 1 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 3/4 cups firmly packed brown sugar
- 3/4 cups buttermilk
- 1/2 cup oil + 1 tsp. oil
- 1 fully ripe medium banana, mashed
Instructions
- Preheat oven to 350 degrees.
- Microwave chocolate and nutella for 1 min, stir until melted. Cool.
- In a separate bowl mix the flour, baking soda, and salt; set aside. Beat eggs in medium bowl, stir in melted chocolate, brown sugar, buttermilk, 1/2 cup oil and the banana. Add to the flour mixture, stir just until moistened. Stir in 2 cups of the cereal. Spoon batter into greased 9×5-inch loaf pan. Crush remaining 1/2 cup cereal in small bowl and add 1 tsp oil; mix well. Sprinkle evenly over batter.
- Bake 50-55 min or until toothpick inserted comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack.
