Valentine Fortune Cookies

You know I just love Valentine’s Day.

It’s a good excuse to be super cute, and over dose on the color pink.

I also love to create new ways for my kids to share Valentines with their classmates. Last year we did these 3D Valentine Cards, and this year, we out did ourselves with some Chocolate Dipped Fortune Cookies.

Personalized….of course….

Fortune cookies are simple to make, and very cost friendly on top of that. And when you’re making 25 individual Valentines, cost friendly is HUGE!

Don’t get me wrong, I love my little sweetie’s classmates…but I’m not spending a fortune on them… {hehe…fortune…}

You’ll want to start with two separate bowls. One for the dry ingredients and one for the wet.

Start the wet bowl off with two egg whites.

Followed by vanilla and almond extract.

And just a little oil.

Use a hand mixer to beat it until it’s frothy.

To the dry ingredients add a few tablespoons of water and use the beaters again to mix until it creates a thick, pasty dough. Finally, add the frothy egg whites to the thick, pasty dough and mix until it reaches a soupy consistency.

Spoon the batter by the tablespoon onto a silicone baking sheet, or a greased cookie sheet.                    **I highly recommend using a silicone baking sheet. You can run into some big problems by forgetting to grease the sheet** Also, I would only start off with making two cookies at a time until you get more efficient at shaping the hot cookies.

I could get 4 at a time, but 5 was too many and one cookie always suffered.

Use the back of the spoon to spread out the cookie dough into a very thin circle. If it’s too thick, the cookie will be more chewy and not crispy.

When the edges turn golden brown remove them from the oven. Quickly use your spatula {again I prefer a silicone one} and remove one cookie to a wooden cutting board.

Be sure to have your fortunes already printed up, cut, and ready to go. Place one in the center of the hot cookie.

Don’t forget to move fast!

This is where all those years of Ninja school will pay off…

Fold the cookie in half towards you to make a half circle.

Pick up the cookie and have the rounded part of the half circle up, and the flat side down.

Have a coffee mug handy and place the middle of the flat side on the edge of the rim and pull the corners down.

These cookies harden real fast. That’s why it’s best to start off with just two at a time until you can get the hang of it.

Once the corners are pulled down quickly place the cookie into a muffin tin to help them keep their shape until they harden completely.

You could stop here, or you could take it another step further and dip them in some super cute pink chocolates, then cover with fun sprinkles.

I found some super cute mini-takeout containers at the craft store that you can pack the cookie in with a few conversation hearts as well.

Instructions

  • Preheat oven to 400 degrees F.
  • Print out your fortunes and cut them so they are about 2 inches across and 3/4 of an inch in height. Have them ready to go before you start baking.
  • Prepare your workspace with a wooden cutting board, a coffee mug, and a muffin tin.
  • In a large bowl combine egg whites, vanilla, almond and oil. Use a hand mixer to beat until frothy.
  • In a separate bowl sift together the flour, sugar, cornstarch, and salt. Add the water and mix until you form a thick and pasty dough.
  • Slowly add the frothy egg whites to the thick and pasty dough, and mix until the dough becomes soupy.
  • Spoon the dough onto a silicone baking mat or a greased cookie sheet by the tablespoon full. Start by just making two cookies at a time. Use the back of the spoon to spread the dough into a thin circle.
  • Bake for 5-6 minutes or until the edges of the cookie turn golden brown. Remove from the oven and promptly take one cookie and place it on the wooden cutting board. Place your fortune in the center and fold the cookie in half. Quickly pick up the cookie so the rounded edge pointing up and the flat side pointing down. Place the middle of the flat side over the edge of a coffee mug and pull the corners down to shape the fortune cookie. Place the cookie in a muffin tin to help keep it’s shape until it hardens completely.
Notes
If you would like to dip the cookies in chocolates:
Melt the chocolates according to package directions, dip one end of the cookie in the chocolate and place on a sheet of wax paper. Cover with sprinkles before the chocolate hardens. Let the chocolate harden completely.

  1. I was wondering if I can use egg whites from a carton instead of actual eggs as I would want to make A LOT and don’t want to waste the yolks or find another recipe to use them up…if I am able to use egg whites from the carton how much would you use for 2 egg whites?
