This football season when you have a hungry crowd and you’re in need of a quick and easy appetizer, look no further than this classic Spicy Southwest Queso Dip made with the Famous VELVEETA and RO*TEL diced tomatoes and green chilies.
Football and snacking pretty much go hand-in-hand, am I right?
I’m a huge fan of chips and dip.
My pantry is always stocked full of chips. It’s embarrassing how many bags of chips are actually in there.
So when I was asked to create a classic queso dip using the famous VELVEETA & RO*TEL diced tomatoes with green chiles duo, it was almost like the snack Gods were looking down upon me and smiling. Go forth, make a cheesy concoction and feed the masses.
Spicy Southwest Queso Dip
This spicy queso (melted cheese dip) is kicked up a notch by using the VELVEETA Mexican Mild Cheese. If you don’t like a spicy version of smoking hot liquid gold dripping from your chips, then stick to the classic VELVEETA Cheese.
It’s still mouthwatering and disappears just as quick.

Spicy Southwest Queso Dip
Ingredients
- 16 oz Mild Cheese, cubed
- 1 tomatoes
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn
- 1/4 cup diced green onion
- Tortilla Chips
Instructions
- Place the Velveeta, Ro*Tel, black beans, and corn in a microwave safe bowl. Heat on high for 3 minutes. Remove from microwave, stir, and microwave for an additional 2 minutes on high.
- Carefully remove from microwave, stir until combined. Top with green onions.
- Serve with tortilla chips. Enjoy!
