These Jalapeno Cheddar Bagels are chewy, full of cheese and spice!
There is nothing better than a fresh baked bagel.
Especially one with bits of jalapeno and crusty bubbled cheddar baked right on top. It may seem like a long drawn out task to make your own bagels at home, but you’ll soon find out that it’s quite simple and well worth your time.
I am typically a savory over sweets kind of gal. If I had to choose between a bagel and a doughnut, I’d go with a bagel.
{Unless the doughnut had sprinkles…}
So when I stumbled upon Jessica’s recipe for some homemade bagels, I knew I had to try it out.
I have been hooked ever since.
One thing I am not hooked on is potty-training.
Not so much.
I knew it was time to get rid of the pull-ups when my little screamer walked up to me with a clean pull-up and a few wipes and said, “Mom, you need to change my diaper.”
Now before you go and start judging me…
No– she is not 5 years old, she just has a very good vocabulary.
and…
No– she was not sporting a “loaded” diaper, she just knew she was wet.
I’m pretty sure my neighbor-friend took me down a few notches on the parenting poll when she came over and saw my 2 year old wandering around bottomless.
Carpe- diem…or something like that.
It wasn’t till I brought home some Dora panties that she finally agreed to cover her sweet little behind.
Apparently princess is out, and Dora is in.
I would buy a Dora costume and prance around the house repeating myself three times if it got her to use the potty.
Luckily it never came to that.
I’ve said it before, and I’ll say it again… she is a smart girl.
Takes after her mom. {that’s both a good and bad thing}
It only took minimal bribing to get her to potty on the toilet. I asked her what she wanted as her reward for filling up her sticker chart and she promptly replied, “Shoes!”
Again….
She is not 15 years old, she is just 2!
I fear that this could escalate into a problem later on in life.
But ‘eh, I’ll let her future husband deal with that.
As long as she is using her little potty, not wandering around half-naked, and wearing cute new shoes, I am one happy mama.
Eating fresh bagels also happens to make me one happy mama.
One key thing to making bagels is to boil the dough in a large pot of water with a tablespoon of brown sugar mixed in. This will help them rise and stay full.
It only takes a few minutes per bagel, then you just plop them down onto a baking sheet. Shred some cheddar cheese. I prefer sharp, but you can use whatever kind you like.
Sprinkle a small handfull onto each bagel and pop them into an oven.
The only thing that is a bummer about these bagels is the amount of time it takes to make them. It requires time to let the dough rise, not once, but three times. I tried a few batches by skipping one of the rise times and wasn’t satisfied with the bagels as much as when I let them rise all three times. It’s worth the extra effort it takes to make these. If you have time on a weekend you can make a large batch and then have them throughout the week.
Of course toasting a freshly made bagel is the only logical thing to do. You can go with butter, but I am more of a cream cheese kind of gal.
I have even used these bagels to make myself an egg and avocado sandwich, it was heavenly!

Jalapeno Cheddar Bagels
Ingredients
- 1 cup water
- 2 1/4 tsp active dry yeast, (one packet)
- 1 1/2 tbsp sugar
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tsp garlic salt
- 2 tbsp jalapeno, you can use fresh or canned
- 1 1/2 cups cheddar cheese
- water
- 1 tbsp brown sugar
- cooking spray
Instructions
- Combine warm water (about 110 degrees F) with yeast and sugar in the bowl of your electric mixer, fitted with a dough hook. Let sit until foamy (about 10 minutes). Slowly add in the flour, jalapenos, salt and garlic salt. Mix with the dough hook until the dough comes together, and then let it continue to knead the dough for about 5 minutes. Add more flour if the dough is too sticky. It should be more elastic and bounce back when pushed.
- Remove the dough from the bowl and place on a floured surface. Knead it a few more times with your hands and shape into a ball. Place the ball into a bowl coated with cooking spray, then coat the dough with cooking spray as well. Cover and let rise in a warm place for about 1 hour, or until the dough doubles in size.
- After an hour punch down the dough and remove it from the bowl to a floured surface again. Separate the dough into 9 equal balls and place on a greased baking sheet. Making sure to leave space between each dough ball. Spray again with cooking spray, cover and let rise for 10-15 mintues.
- During this time bring a large pot of water and 1 tbsp of brown sugar to a rapid boil.
- After the second rise uncover the dough balls and poke a finger in the center of the dough and wiggle it around to form the classic bagel shape. Repeat with all the dough balls. Cover and let rise for another 10-15 mintues.
- Pre heat the oven to 415 degrees F.
- After the final rise carefully place one to two bagels at a time (depending on how big your pot is), in the rapid boiling water. Boil on each side for 2 minutes then remove with a slotted spoon back to the baking pan. Repeat for all the bagels.
- Top each bagel with a small handful of cheese and place in the pre heated oven for 25-28 minutes or until the bagels are slightly browned and the cheese is crispy looking. Remove from the oven and let cool completely.
- Store bagels in an air tight container in the refrigerator.

These were delicious! I used canned jalepenos, and found that they gave a nice flavor, but were not spicy. My 3 year old loved them too. I may try increasing the jalepenos next time for a spicier version! The recipe was easy to follow and gave great results. I can’t wait to make them again!

I would freeze after the first rise, after you’ve shaped them into balls. Then when you’re ready to make them, pull them out and cover loosely and let them rise and then shape them into bagels and boil. Hope that helps, and I’m so glad you’re enjoying them!

Would have been nice if in the ingredients you mentioned the need for a dough hook and mixer. I went out and bought all the crap to make this but can’t do anything with it since I need a dough hook. Thanks for wasting my time. Pretty much ruined the entire day by not putting that in the list. It said I needed a stock pot in the ingredients so why not mention the freaking mixer? Also no one needs a huge story before you can get to the recipe. Quit wasting people’s time.

Hi Katie, I’m sorry about not mentioning the mixer with dough hook earlier. It’s actually not necessary, just makes it easier.
You can always knead the dough by hand. Just let the yeast activate in a bowl, add the flour and other ingredients, then when it says to use the dough hook, just use a sturdy wooden spoon to stir until the dough forms. Turn it out onto a floured surface and continue with the recipe as written. All is not lost! You can do this! 🙂

Am I supposed to use the mixer for ten minutes until the yeast and sugar water is foamy? Or just mix well and then let it sit. I guess I’m not sure if it gets foamy on its own. I’m a beginner 🙂

The yeast will get foamy as it sits in the warm sugar water. This shows you that the yeast is active and will rise when you want it to. If it doesn’t foam, start over with new yeast.
