It’s about that that time of the year when our gardens are beginning to produce more and more summer vegetables.
Last year I planted 12 tomato plants, thinking that for sure at least 10 of them would die (I’m not the best gardener), but surprisingly, all 12 plants survived. And they thrived.
Tomatoes for days.
My favorite way to use up those grape tomatoes was to roast them. They turned into sweet little jewels that compliment so many wonderful dishes. Just like this Garden Pizza with Sun Dried Tomato Pesto.
I love this pizza because it’s so simple and fresh. I used sliced zucchini, fresh tomatoes, and fresh mozzarella on top of a sun dried tomato pesto sauce.
If you want to add some chicken to it, then you can do that too. But I kept this one as a veggie pizza.
Once it’s all melty and cheesy toss on some fresh basil from the garden. Even if you don’t have a garden, these veggies are super cheap and super fresh at the grocery stores this time of year. Check your local farmer’s market too!
