Preheat oven to 400 degrees F. Unwrap the ham and place on a large sheet of foil, creating a pouch for it, so any juices remain inside. Seal it closed and place in the middle of a large sheet pan.
Toss the cut baby potatoes in 1 tbsp avocado oil, then season with ½ tsp salt, ¼ tsp black pepper, ¼ tsp garlic powder and ¼ tsp parsley flakes. Place the potatoes in an even layer on one side of the sheet pan.
Toss the sliced carrots with the remaining avocado oil (1 tbsp), salt (½ tsp) and pepper (¼ tsp). Place on the sheet pan on the opposite side of the ham in a single layer.
Bake in the oven for 20 minutes.
Ham Glaze
While the dinner is baking, combine the ham glaze ingredients in a microwave safe dish, preferably one with higher sides so it does not bubble over. Microwave the glaze in 30 second increments, until the glaze begins to thicken slightly (approximately 2 minutes total).Use caution - this mixture will be very hot!
Remove the sheet pan from the oven and stir the potatoes and carrots. Unwrap the ham, leaving the bottom of the foil pouch still intact, exposing the top of the ham. Brush half of the ham glaze over the ham and return the sheet pan to the oven.
Continue cooking for an additional 15 to 20 minutes, until the potatoes and carrots are tender and the ham is at least 120 degrees F. Brush the ham with the remaining glaze if desired just before serving. Enjoy!

You can swap out the carrots for other veggies like brussels sprouts, broccoli, green beans or cauliflower if desired.
