Sauté the onion in olive oil over medium-high heat, until onion is nice and tender. Add in the garlic and cook until garlic is fragrant, about 30 seconds.
Stir in the remaining ingredients and bring mixture to a low simmer, stirring frequently. Let sauce simmer for 20 to 25 minutes, breaking up the diced tomatoes as you stir, until the sauce is thickened.
