Slice the chicken into 2 x 1 inch rectangles. Season the chicken with the salt and pepper.
Setup little stations starting with the flour in a shallow bowl, then the eggs beaten in another bowl, and finally the corn bread crumbs into yet another bowl.
Starting with the flour – coat the chicken pieces. Dip the chicken into the eggs and then cover the pieces with the bread crumbs.
Place on a greased baking sheet. Bake for 30 minutes – less if you made smaller pieces. Make sure you check for doneness.
