Line a rimmed baking sheet with aluminum foil then place an oven safe cooling rack inside the baking sheet, then lightly spray with non-stick cooking spray.
Combine the cup of crushed croutons and 3/4 cups Parmesan cheese in a bowl. In a separate bowl place the flour, and fill another bowl with 1/2 cup of Caesar dressing. Dredge the skinned part of each chicken thigh with flour, then dip the floured part in the Caesar dressing and then dip in the crouton crumbs. Place skin side up on the baking sheet and bake for 35 to 40 minutes, or until cooked through.
Meanwhile toss the romaine lettuce with the remaining 2 tbsp Caesar dressing, 1/4 cup Parmesan cheese and 1/2 cup croutons. Serve this quick Caesar salad with your crispy chicken thighs.
