In a large bowl combine cream, milk and sugar. Stir until combined and sugar is dissolved. (It wont take long with the baker's sugar, but if you use regular sugar just keep stirring until it's all dissolved)
Add the crushed pineapple, sweetened coconut flakes, coconut extract, and rum extract. Stir to combine.
Process in your ice cream maker according to manufacturer's instructions.
Once it's set, you can place in the freezer to let it become more firm, or serve as a softer ice cream right out of the mixer.
Top with toasted coconut, whip cream and a cherry.
