Wash the sweet potatoes and pat dry with paper towels. Use a fork to pierce the potatoes all over. Brush the potatoes with olive oil and place in air fryer basket.
Cook at 370 degrees F. for 30 to 40 minutes, until potatoes are fork tender.
While potatoes cool slightly, whisk together the sugar and cinnamon in a small dish. Slice potatoes on top and pop open, fluffing the insides of the potato. Sprinkle with the cinnamon sugar mixture and top with butter. Enjoy!

SAVORY SWEET POTATO: If you prefer a more savory sweet potato, omit the cinnamon sugar mixture and sprinkle with salt, pepper and crushed rosemary, then top with butter.
