Spray a sheet of tin-foil (approximately 15 inches long) with cooking spray.
Top with a handful of sliced potatoes. Sprinkle with salt and pepper. Spoon on 2 tablespoons of Cream of Chicken soup, and top with some cheese and green onions. Add jalapenos if you like it spicy.
Take the long ends of the tin-foil and bring them up together to meet on top. Fold over 2-3 times to create a pouch. Pinch the sides closed tight.
Repeat for the remaining potato packets.
Lay the hot coals on the ground in a checker pattern, the width and length of your potato packets. Intermingle the checker pattern with small rocks. Rotate the potato packets every 10-15 minutes to avoid them burning. Should be done in about an hour, but test one packet first to make sure.
