Strawberry Quinoa Salad

Freshly cooked quinoa on a light summer salad!




  1. To cook your Quinoa start off by rinsing it under cold water. Place your Quinoa in a pot and cover with 2 cups water (use a 2:1 ratio; like when you cook rice).
  2. Bring to a boil about 14-18 minutes until the germ has separated from the seed.
  3. Transfer your Quinoa into a large bowl and let it cool to room temp. {Approximately 20 min.}
  4. Chop up your strawberries and cucumber.
  5. In a separate bowl toss 1/4 cup dressing with the green salad mix. Put a nice helping of the salad on 4 plates.
  6. Use the remaining 1/4 cup dressing and add it to the cooled Quinoa.
  7. Add the Strawberries and Cucumber.
  8. Give it a good mix.
  9.  Add to the top of your patiently waiting greens. Sprinkle with a little salt and freshly ground pepper.
