Greek Salmon with Tzatziki Sauce

If you are looking for a quick and fancy meal to prepare, look no further.

Salmon is one of my favorite fish. Many years back The Man went on a fishing expedition to Alaska. It was one of those “once-in-a-lifetime” kind of trips with his brothers that he just couldn’t pass up. I allowed this because he came home with 75 pounds of Halibut and 25 pounds of Salmon.

Lets just say I have cooked Salmon and Halibut in more ways than you can think of.

This is an easy dinner to prepare in less than 30 minutes, and anybody can do it.

When it comes to Salmon, try to buy fresh. Don’t be intimidated by the skin, ask your butcher to remove it for you, or cook with it on. The tail pieces have little to no bones, so I like to buy those pieces.

Drizzle the fillet with olive oil and brush it to coat evenly.

Grab some good old Greek seasoning and sprinkle to coat the salmon.

Now throw it in a 450 degree oven for 15 minutes.

While that’s cooking lets prepare the Tzatziki sauce.

Squeeze the juice of half a lemon and set aside.

Peel a cucumber and cut it down the middle to make two long pieces. Using a spoon, scoop out the seeds, and discard them. Dice the cucumber into tiny pieces.

In a small bowl combine some plain yogurt, the cucumber and lemon.

Add just a little bit of dill. {I like to use the dried stuff cause I can’t, for the life of me, keep any sort of fresh herb alive for more than a day.}

Throw in a little salt and fresh pepper, give it a quick stir to get all the flavors combined and store it in the fridge until your salmon is ready!

While the salmon is cooking, you can also prepare some steamed veggies or a pot of pasta, like I did here.

And there you have it! A quick, classy meal, bursting with fresh and bold flavors, all prepared in less than 30 minutes!

You can’t beat that!
