Creamy Mexican Corn Salad

All the flavors of the classic Mexican Grilled Corn, in a cool and creamy side salad!




  1. Grill corn over high heat until lightly charred. Use a sharp knife to cut corn kernels away from cob. Place corn kernels in large bowl.
  2. Mix together mayo and sour cream and stir into corn.
  3. Season with chili powder, salt, pepper, lime juice, cilantro and cotija cheese then stir to combine. Serve immediately with lime wedges.


This corn salad can be made up to a day ahead of time and stored in the fridge until ready to serve.
