I haven’t always liked coconut.
It’s one of those things that grew on me as I got older. I guess what really grew on me were those delicious little Almond Joy candy bars. I don’t know if it’s the almond, the coconut, or chocolate…but they are one devine treat.
Speaking of devine – I just adore brownies.
I mean- the corner brownie. {am I alone here?}
Some may like the ooey-gooey center pieces, but I prefer the crustier corner piece.

These little brownie bites will make you jump for joy!
These are a snap to put together. All I used was a boxed brownie mix, and added a 1/2 cup of mini chocolate chips {for good measure}.
The coconut mixture is a simple 1-2-3. Sweetened condensed milk, sweetened coconut flakes, and powdered sugar. In a small bowl combine 1/2 cup sweetened condensed milk, 1 1/4 cup coconut, and 4 tbsp powdered sugar. Give it a good mix.
Spray a mini-muffin tin with cooking spray, and layer with brownie batter, coconut mixture, and almond.
Top with brownie batter, repeat.
Bake for 8-10 minutes, remove from oven and let cool in pan for 2-3 minutes.
Try not to eat all of them when they are warm and sublime…others will want some too.
Remove to cool completely on a wire rack.

Almond Joy Brownie Bites
Makes 42 brownies
Ingredients:
1 boxed brownie mix
1/2 cup mini chocolate chips
1/2 cup sweetened condensed milk
1 1/4 cup sweetened coconut flakes
4 tbsp powdered sugar
42 unsalted almonds
Directions
Preheat oven to 350 degrees
Prepare brownie mix as directed on box. Fold in 1/2 cup of mini chocolate chips.
In a small bowl combine sweetened condensed milk, coconut, and powdered sugar. Mix well. Spray a mini muffin tin well with cooking spray. Layer with 1/2 tsp brownie batter, 1/2 tsp coconut mixture, almond, and 1 tsp of brownie batter. Re-spray muffin tin between each batch.
Bake 8-10 minutes. Remove from oven and leave in pan for 2-3 minutes, then remove from pan to cool on wire rack till cool.
































Okay, now this is just getting weird. About 2 weeks ago, I made marbled chocolate pumpkin cupcakes with cream cheese frosting…a few days later you posted a pumpkin chocolate chip cupcake recipe. It's different, but still quite similar. Yesterday I went to the store to get ingredients for Chimichurri to have that night with our hamburgers. That day, you posted your chimichurri recipe. And now today..I just made a chocolate cake with melted Riesen's candy mixed in. I get online and you posted your yummy brownie Almond Joy bites, which is different, but still using the candy bar/cake duo idea. So, weird right? Our brains are either hard wired together or we just have very similar cravings at the same time. LOL. Yet, we're miles apart!!
